The fourteenth recipe I made from the Sweet Tarts & Pies section (the 72nd recipe overall in this book) of The Modern Baker by Nick Malgieri, was the one for Lemon Lime Tartlets, on page 189. (We are not publishing recipes from the book, so if you like what you see, buy the book and bake along with or without us). Citrus in desserts...my favorite!
The ingredient list for the crust: all-purpose flour, unsalted butter, sugar, baking powder, salt, and eggs. I used a half of the dough recipe for 12 little tarts about 2-1/4" size.
The ingredient list for the filling: lemons, limes, sugar, butter, and egg yolks. I made half of the filling recipe and had some left over as I didn't want to skimp on the filling.
The tart shells are baked for 10 minutes, cooled, and filled with the citrus curd when ready to serve. It was suggested topping the little tartlets with almonds or coconut so coconut was it.
These are so delicious, they just melt in your mouth. Definitely a repeat.
