This week for the newly structured CEiMB, yes, the little Ellie group has been reborn and we are now structured a bit differently, I chose to make the Roasted Tomato and Black Bean Soup on pages 204-205 of Ellie Krieger's book, So Easy.
We decided that with our busy lives, etc., it made sense to change the format of the group a bit to lessen the commitment to posting a certain number of times (we now can post at will and leave our links under the week indicated at the main site when we post so that means if you would like to cook along with us occasionally and leave your link, you are more than welcome to do so, just post, link, and you're included), and we are all free to make whichever Ellie recipe we would like to make each week, i.e. free choice! This way it fits in with family tastes, budgets, desires, and most of all gives us a chance for some fun each week at picking our favorite recipes. All good. We are also now posting on Fridays.

Ingredient list: tomatoes, onion, garlic, olive oil, salt, pepper, chicken broth, black beans, cumin, chili powder, hot pepper sauce.
I love soup, no surprise that I would head straight for a soup recipe given the first opportunity. This was good, nice and roasty-tasting from the oven roasted tomatoes and the cumin, a little spicy from the chili powder and hot sauce, just a whole lot of flavor in this soup. I added a little parsley to pep up the photo a bit, but the soup itself doesn't need a single other thing. Soup weather is here, this is definitely a repeat.
