This week for A Little Ellie Everyday, I made the Open-Face Chicken Parmesan Sandwich, from Ellie Krieger's book, So Easy, found on page 115 and also online here.
Do you ever grill chicken breasts and then end up with one or two extra and wonder what to do with them? Add this recipe to the line-up, it's easy, quick, healthy, and delicious! We made them on a ballgame-watching night, and while a bit messy to eat (you need a knife and fork), a really nice option for a meal while watching the games....think of it as tailgate food at home.
Ingredient list: cooked chicken breast, marina sauce, fresh spinach leaves, mozzarella cheese, grated Parmigiano Reggiano, and Italian bread.
To make this a little easier for the guys to eat (Mark wanted a closed sandwich, so I did put a bread top on for him), I think I will shred the chicken next time and mix it in the marina sauce, top with the spinach and the cheeses...kind of like a pulled pork/chicken sandwich, as I think it would be easier to pick up and eat with the hands that way. Great recipe.
