This week for A Little Ellie Everyday, I made Asparagus with Lemon and Tarragon, from Ellie Krieger's book, The Food You Crave, recipe found on page 252.
Quite often when I am searching for a new recipe to make I get caught up in the photos and chose something that has a photo (maybe because I figure I can see where I am going with it), pick a main dish, and call it a day. Lately I have been trying to remember to look for side dishes to accompany a main dish, something new and different to do with the same old line up of vegetables that we use as side dishes around here.
Such was the case when I was searching for a side to go with the shrimp and pasta that I had marked for Wednesday's dinner. I had asparagus on hand, so I chose this recipe (which I must have passed hundreds of times while looking through the book, it has no photo). And such a happy outcome as it was light and tasty, perfect with shrimp and pasta.
Ingredient list: asparagus, olive oil, grated lemon zest, lemon juice, salt, pepper, and chopped fresh tarragon.
