The tenth recipe I made from the Sweet Tarts & Pies section (the 68th recipe overall in this book) of The Modern Baker by Nick Malgieri, was the one for Chocolate Orange Hazelnut Tart, on pages 178-179. I am on a tart-making tear, let me tell you. This 6" tart pan is just a perfect size, the slices small and nice, all of it easily eaten in a day or two so that I can move on to making something else that's new and fun. The tarts go together particularly quickly if you have the tart dough made and stashed in the refrigerator (for up to 2 days) or in the freezer, ready to go. Each of the dough recipes in this section makes enough dough for three of the little 6" tarts, so if you make a couple of batches of the dough, divide it up, you have six tart crust ready to roll, fill, and bake. Piece of cake...no wait...easy as pie, that's the correct adage. I will miss this section when we move onto the next one as I think tarts are my favorite things to bake.
