The recipe chosen this week for CEiMB, using Ellie Krieger's So Easy, was Crispy Chicken Fingers with Honey-Mustard Sauce, chosen by Jennifer of The Rookie Baker and found on page 200 of Ellie's The Food You Crave book. You can also find the recipe here.
These were fun and easy and quite good actually, a nice bit of tender white chicken breast covered with a crispy coating. The sauce was tangy with the mustard, which we loved as we are definitely a mustard-loving family.
I followed the recipe just as Ellie wrote it and was happy with the results. I would change just one thing the next time I make this, and that is that instead of baking them on a spray-coated baking tray, I would put them on a wire rack on a baking tray and cook them that way as the tops were nice and crispy doing it on the baking sheet, but the bottoms were not, so I'm thinking doing it on a wire rack on top of the tray would give it a crispy coating all the way around the chicken.
This is a nice recipe for snacking while watching ballgames or for lunch or dinner, easy, fast, delicious. Definitely a repeat.
