The twelfth recipe that I made from Bake! by Nick Malgieri was Best & Easiest Carrot Cake, found on pages 130-131.
My guys are not big cake eaters for some reason. Cake just isn't really their thing at all. I can bake a cake and they will have a slice and then that's pretty much it. I have been known to give cake away to anyone who hits the front door when one is in residence. There are two exceptions: Pineapple Upside Down Cake and Carrot Cake. Those two cakes are always popular and always get eaten in total.
Phyl picked the Best & Easiest Carrot Cake recipe for us and I have to say, it was easy and it was very very good, maybe the best I have made in fact.
Ingredient list for the cake: flour, sugar, baking powder, baking soda, salt, cinnamon, dark brown sugar, eggs, vegetable oil, carrots, and walnuts. The ingredient list for the cream cheese frosting: cream cheese, butter, confectioner's sugar, and vanilla.
Could not be easier, absolutely delicious. I used my 6" cake pans and a half recipe of the cake batter worked perfectly to make the two layers. I used two-thirds of the recipe for the cream cheese frosting and it was also a nice amount...the guys like plenty of this kind of frosting! Definitely a repeat.
