The eighth recipe that I made from Bake! by Nick Malgieri was for the Individual Coconut Cakes, found on pages 134-135.
It was my turn to choose a recipe and I was looking for something to put into the guys lunches that would also be portable and available for snacking for them. I found just the thing as the little cakes are made in mini-muffin tins. Phyl and Margaret agreed that it was a recipe they found appealing, so we scheduled a Twitterbake for this afternoon.
Ingredient list: sugar, flour, unsweetened coconut, sweetened coconut, egg whites, salt, lemon zest and butter. It all comes together quickly and easily and bakes for 15 minutes.
One little cake is very rich and satisfying if you are looking for just a little something. Light, moist, coconutty, and delicious! Definitely a repeat.
