The third recipe I made for French Fridays with Dorie, from Dorie Greenspan's Around My French Table cookbook, was Hachis Parmentier, found on pages 257-259, which is really just a fancy French way of saying Shepherd's Beef Pie.
Ingredients include: Boneless beef chuck, onion, carrot, celery, garlic, parsley, bay leaf, salt, peppercorns, water, beef bouillon cube for the making the beef. For the filling: olive oil, sausage, tomato paste, salt, and pepper. For the topping: potatoes, milk, cream, unsalted butter, salt, pepper, and grated cheeses.
Although the recipe instructions took two entire pages of the book, it was easy to make following Dorie's step-by-step instructions. Dorie has a way of making all recipes user-friendly. It seems a bit fussy, in the French way, just to make a beef pie, but trust me, the extra fussiness is what makes the depth of flavor, something the French are very good at with their cooking.
I followed the recipe exactly, had wonderful results, and the guys voted it a definite return, Mark even setting aside a portion to take in his lunch the next day.
