The recipe chosen this week for CEiMB, using Ellie Krieger's book, So Easy,
was selected by Heide at Chez Zero and is Blueberry-Almond French Toast Bake.

The ingredient list: Whole-Wheat Baguette, low-fat milk, eggs, maple syrup, vanilla, cinnamon, blueberries, almonds, and dark brown sugar. The recipe is easy and delicious, and we were plenty skeptical as we do not care for wet bread type things. I only made a half recipe as I wasn't certain it would go over well. The eggs, however, seemed to make it behave more like a quiche than a bread pudding.
The nicest feature of this recipe is that you can prepare it the night before and pull it out ready to put in the oven the next morning for breakfast which makes it perfect for holiday mornings or when you have overnight guests. The guys say it is a definite repeat.
