The recipe chosen this week for CEiMB, using Ellie Krieger's book, So Easy,
was selected by Pamela at Cooking with Boys and is Mixed Berry Cobbler.

The
ingredient list for this is short for the filling: bag of frozen mixed
berries, whole wheat flour, sugar, and fresh grated orange zest. It
just gets stirred together and plopped into the baking dish. Ingredient
list for the topping: whole wheat flour, all-purpose flour, sugar,
baking powder, baking soda, salt, unsalted butter, low-fat buttermilk
and canola oil, which gets mixed and spooned onto the top of the berries
before baking in the oven.
It
was all very easy and very tasty, something I will make again. It is also something that is particularly nice to have for the winter months when
fresh berries are not that great in the markets.
