The twelfth recipe I made from the Quick Breads Section of The Modern Baker by Nick Malgieri, was the one for Blueberry Crumb Muffins, on page 58. (We are not publishing recipes from the book, so if you like what you see, buy the book and bake along with or without us).
Okay,
THIS one is my favorite so far. Nice plump juicy blueberries and a
crumb topping...what's not to love about all that? Very easy recipe,
the only thing I would change is that I would add just a little vanilla
to the batter next time as I am all about the vanilla in baked goods.
Other than that, I wouldn't change a thing.
I made the entire recipe
and it gave me 18 muffins, not 12, so either my muffin pans are not the
size that the recipe used (they can vary in size a bit even when you
think you have "standard" ones), or I just didn't fill them to
overflowing. I liked the way they turned out, so I noted that in the
book for next time. A repeat? Definitely.
