We loved this tart,
it was full of wonderful berry goodness sitting on a pastry cream
filling and a sweet tart dough crust. The red current glaze sparkled
it all up and gave it an extra sweetness to the berries.
I
made a half recipe in four small tarts as Dorie indicated that it is
best eaten on the day it is made, even the guys can't eat a large tart
all in one sitting in one day. The four little ones worked out
nicely.
We had some left for the next day, and I can see why Dorie
said to make and serve it on the same day: the pastry cream was a
little thinner with a small amount of liquid in it the second day.
Still tasted very good, though!
Despite having three parts to the
assembly, it all went together easily and quickly. I know this is
something I will make many times in the future when summer fruits are
all around us.
