The fifth recipe from The Modern Baker group baking from the book by the same name by Nick Malgieri, is Whole Grain Apple Raisin Bread, on pages 48-49. (We are not publishing recipes from the book, so if you like what you see, buy the book and bake along with or without us).
The ingredient list is not long: flour, whole wheat flour, baking soda, cinnamon, eggs, brown sugar, oil, apples, raisins, and walnuts. It doesn't take long to assemble. I made a half recipe in my little mini loaf pans, so it took them only 18 minutes to bake.
I think you were supposed to let them cool a bit, but one of them didn't get the chance...Mark and I shared one, and it was oh-so-good warm! I checked a bite later as well, and is also delightful room temperature. Plain or with cream cheese, as is, or toasted...all good.
