Okay, I fully confess that my usual "go to" cornbread is Jiffy Mix. I
grew up with Jiffy Mix mostly, I think, because it was jiffy, just
plain easy, quick, inexpensive, and good. I spiff it up a bit now and again with
various add-ins, but by and large, I'm not up for much more commitment
for cornbread on a regular basis.
Until now as Mark really liked this cornbread recipe from Modern Baker a lot. I have to agree, it's very tasty and makes you want to have more than just one, always a good indicator we have a winning recipe.
We had a choice to
make this in a single pan or in muffin form. Muffin form is always
good here with guys as they consider muffin form "portable food,"
therefore easier to grab as a snack and things don't get forgotten and
go to waste.
The recipe is easy and delicious. I think this is
now my "go to" cornbread for the future on chili days as I think the jalapeno factor goes very nicely with chili. I'm also
thinking of adding in some sharp cheddar cheese next time, just because
everything with chili is better with sharp cheddar cheese.
