The recipe chosen this week for CEiMB, using Ellie Krieger's book So Easy, was selected by Nicole from Dishin' and is Whole Wheat Apple Pancakes with Nutty Compote,
found on pages 61. What a great choice, Nicole, we loved these pancakes, thanks. Nicole has the recipe posted on her site today.
Each
Sunday I make the guys what is referred to as "a big breakfast," i.e.
something other than portable food in hand going out the door to swim
practice or work, which is all they want the other six days of the
week. I have tried to suggest making and eating a good breakfast each
day and they have resisted all efforts. But, on Sunday, I get to make
things that I don't normally get to make and they enjoy every single
bite each week.
This week I decided, since it was Mother's Day, that
these pancakes of Ellie's would be a fine way to celebrate the day.
The nutty compote on the top makes it all seem so special and out of
the ordinary. Ellie had factored in drizzling on an additional
tablespoon of syrup (not needed, so I didn't include that, although the
guys did put butter on the tops of their pancakes as well), and believe
me when I say that this plate of two pancakes is one too many as they
are very filling and satisfying, one is more than plenty. Requests for
a repeat accompanied the empty plates. Definitely.
