The recipes chosen this week for CEiMB, using Ellie Krieger's book The Food You Crave, were selected by me
and are rewinds as there was no recipe posted for this week (not sure
why, maybe because it's a holiday weekend). I figured I would post a
rewind of something that I made from the book that was very much
enjoyed here, just in case you would like to make it also.
The group
had already made this meatball recipe before I joined, so I made
Ellie's Turkey Meatballs with Quick and Spicy Tomato Sauce and Whole
Wheat Spaghetti (on pages 164-165 or found here). Okay I didn't have whole wheat pasta on hand then, but I would recommend using that instead of the plain spaghetti that I used that day.
I then used some of
the leftover meatball mixture for Ellie's Meatball Heroes with
Tri-Colored Peppers (page 92 or found here), made with the BBA Italian
Bread that I made into sub rolls for the guys. Trust me, there are meatballs in there, they are just hidden by the cheese and peppers. And, btw, one half of one of these will fill you up if you are a girl...if you are a teenage boy swimmer, two will do.
Both meals were a big hit. I need to make those again soon actually. Definitely.
