With grilling season upon us, fresh fruits and vegetables becoming readily available, I dusted off my Greek cooking books and vowed we were in for Greek night once a week around here over the summer. Ellie's recipe this week, grilled lamb in a Greek-inspired marinade, sounded like just the place to begin, you can't get more Greek than lamb.
The marinade olive oil, lemon juice, lemon zest,
oregano, garlic, salt & pepper was easy enough, ingredients I
always have on hand. Marinating the lamb chops for about 45 minutes
before grilling 6 minutes per side was just the level of commitment
needed on a busy weekday evening. Absolutely wonderful in taste and
texture, definitely a repeat.
The rest of the meal consisted of Double
Lemon Avgolemono Soup, Red & Yellow Peppers with Halloumi and Pine
Nuts drizzled with a little Garlic Olive Oil, and the Pain a l'Ancienne
for BBA that I made today. We even had dessert, although not
Greek...next week's TWD Mixed Berry Tart as I am just that far ahead of
things this week. It's Greek One Night a Week for the
summer...and Ellie's lamb chops were a great way to start it all off.
