The second recipe from The Modern Baker group baking from the book by the same name by Nick Malgieri, is Chocolate Spice Bread, on pages 44-45. I made only a half recipe of this bread as I have quite a bit of cooking/baking to do to catch up this week, guys can only be expected to eat so much.
I also baked the bread in little mini loaves as they are more portable for the guys for breakfast than slices of the bread, i.e. one of these little mini loaves is about the equivalent of two muffins, I would think. One half of the recipe made four of the little mini loaves as you see above.
The recipe was incredibly easy and the taste was pleasing and satisfying to those who indulged, the inside nice and moist with plenty of chocolate flavor. I think this is a repeater. Although I am always amazed at those who eat chocolate for breakfast, apparently it's a nice change, and it works well for snacks as well.
