The nineteenth Bread Baker's Apprentice challenge (from the book by the same name authored by Peter Reinhart) is Marbled Rye Bread, and is found on pages 183-186.
This was a fun bread. You get to make two different kinds of rye dough, one light and one dark, and then stack the pieces layering them together, the end result being a swirl in the bread.
I know, thrills are cheap these days, but this was just so much fun to do! The bread was so pretty on the outside, so much fun on the inside, and tasted so very good. I will definitely make this again. We used it today for making Rueben sandwiches and it was absolutely wonderful. Definitely a repeat.
