Thanks to Carmen of Carmen Cooks for her Tuesdays with Dorie pick of Coconut Tea Cake, found on pages 194-195 of Dorie Greenspan's Baking from My Home to Yours cookbook. Carmen has the recipe posted on her site.
I decided to make a fourth of this recipe in a little individual shortcakes pan that I have as I figured the guys would be more likely to eat this type of cake if berries and whipped cream were involved. I was right, it was a hit as a shortcake. The cake itself is very flavorful as it has vanilla, coconut, and rum in it, all flavors that taste lovely in a cake.
I can see using this recipe often for shortcake treats. Thanks, Carmen, for a lovely pick this week.
Next week: Erin from When in Doubt, Leave it at 350 has chosen Mocha-Walnut Marbled Bundt Cake, found on pages 180-181. TWD blogroll found here.
