The recipe chosen this week for CEiMB, using Ellie Krieger's book The Food You Crave, was selected by Rachel at Rachel Hearts Food and is Peppercorn Pork with Wine Sauce, found on page 196. Rachel has it on her site today as well. Thanks, Rachel, this was a great recipe, one that we will use again and again.
The recipe was amazingly easy, very tasty, and although I cannot photograph meat for the life of me, on the plate it looked wonderful. I liked learning the new technique, well, new to me, of slicing the pork as directed so that it will cook faster, always a plus on a week night. The sauce was light and tasty and although the Whisk Chick in me wanted to add that tiny bit of butter at the end to smooth it all out, I resisted, and I have to say that I did not miss it. The sauce complimented the meat nicely. Definitely a repeat: we all loved it.
