Thanks to Michelle of Flourchild for her Tuesdays with Dorie pick of Honey-Wheat Cookies, found on page 81 of Dorie Greenspan's Baking from My Home to Yours cookbook. Michelle has the recipe posted on her site today. (And, thanks, Michelle, in a month of chocolate recipes, you were thinking of me, right? No chocolate involved, and best part: lemon and honey.)
These are a perfect tea cookie, absolutely perfect. If you are going to have a cup of tea, and you want a little sweet with it, this is it. A perfect match. The recipe goes together easily and quickly, plus it has the added advantage in that you can make the dough ahead, refrigerate it for a day or two, and bake them off later.
The cookies have honey, butter, lemon, and wheat germ in them...what more could you ask for with a cup of hot tea? I made half a batch only (18) as I was running low on honey and only had enough for half. I halved everything, except I accidentally (on purpose) forgot to halve the lemon part, which was a very good thing as these are now nice and lemony. The cookies were a hit with everyone, definitely a repeat.
