The recipe chosen this week for CEiMB, using Ellie Krieger's book So Easy: Luscious Healthy Recipes for Every Meal of the Week, was selected by Heide at Chez Zero and is Broccoli-Cheddar Breakfast Bake, found on page 52, and Heide has it on her site today as well. Thank you, Heide, it was a great choice, we all loved it.
I have been missing in action here for a couple of weeks. With the steak recipe I decided to wait and make it when we could thaw out the grill, and I had intended to do the Chocolate Mousse recipe, but I don't like chocolate, and the guys found out I was buying tofu for it and nixed the whole idea.
While Ellie has this week's recipe listed in the breakfast section of the book, that did not work out this week as the only breakfast we have together is on Sunday mornings, and last Sunday morning was a bit disjointed with Matt needing to serve a Mass that was right in the middle of breakfast time.
So I made it tonight. For dinner. It was a fine dinner, with eggs, broccoli, onions, cheese, whole wheat baguette, and ham. HAM???? Ellie doesn't say a thing about ham in the recipe, but since I was making it for dinner and the swimmer is this close to state, I figured I better up the protein a bit and while eggs are not his favorite, he can be talked into them if ham is involved.
Another great recipe...we would like it with or without the ham, and someday soon it will find itself on the breakfast menu as it is something you can make ahead and bake at a later time. Oh, so convenient with that added advantage.
