Another keeper. So simple, so easy, so very very good and good for you! Ingredient list: Black Beans, Corn, Onions, Cilantro, Avocado, Lime Juice, Tomatoes, Scallions, 2 kinds of Peppers, Cheese, Cumin, well you can click on the link and check the list yourself, and then go make it...it's easy, it's good, it's healthy, and it skips all the fatty ingredients found in most layered dips.
I baked some whole wheat tortilla chips and broke them into pieces to serve with the dip, perfect match. The only thing I changed was that I put the whole thing in an 11x7 inch dish rather than an 8x8 one so that it wasn't as deep and went a little further per portion for guys watching basketball games.
