The recipe chosen this week for CEiMB, using Ellie Krieger's cookbook, The Food You Crave: Luscious Recipes for a Healthy Life, was selected by Maria at Half Meatball Half Matzah Ball Children and is Arugula, Caramelized Onion & Goat Cheese Pizza, found on page 173. This recipe is definitely a keeper. So simple, so easy, so very very good! Ingredient list is short: red onion (to be caramelized), arugula (to be just wilted in with the onions at the end), 6 inch whole wheat tortillas (to serve as the pizza crust), and goat cheese to scatter on the top. Toss it in the oven for 10 minutes and you have one very fine lunch at only 141 calories.
