Thanks to Barbara of Bungalow Barbara for her Tuesdays with Dorie pick of Sables, found on pages 131-133 of Dorie Greenspan's Baking from My Home to Yours cookbook.
Sables are lovely, especially if one adds the optional choices of lemon or orange flavorings to them. Basically a type of butter cookie, the sables were a little crispy on the bottom and sides and tender in the middle. They aren't what I would call a "show stopper" in the looks department, but they sure are in the taste department, so as in many aspects of life, looks aren't always everything!
I used yellow sugar on the lemon flavored ones and orange sugar on the orange flavored ones, making them easy to distinguish on the platter. If I had had a lime or two in the house, there would have been lime ones as well. Make them: they are wonderfully simple and delicious.
