The recipe chosen this week for CEiMB, using Ellie Krieger's cookbook, The Food You Crave: Luscious Recipes for a Healthy Life, was selected by Lobster and Fishsticks and is Tuscan Vegetable Soup, found on page 85.
Okay, it's soup, stop yawning as this is really excellent soup. The flavors are wonderful together, it gets even better when it sits for a day or two and you heat it up again, and on these cold/rainy/getting-darker-earlier-than-usual days, it's just the thing to make you feel all warm and snuggly.
As usual with Ellie, all nutrition all the time, no fake ingredients, and easy, easy, easy to make. I made it exactly as she had written the recipe, but I did not add the additional parmigiano on the top as I only like cheese on top of soup when it is French Onion Soup, all else pales by comparison. Highly recommend making this soon, it was a big hit here.
