The recipe chosen this week for CEiMB, using Ellie Krieger's cookbook, The Food You Crave: Luscious Recipes for a Healthy Life, was selected by Sara from imafoodblog and is New York Breakfast, found on page 24-25.
New York Breakfast, as you probably already know, is thinly sliced smoked salmon on toasted pumpernickel with a smear of cream cheese, a couple of cucumber slices, some tomato, thinly sliced red onion, and a few snips of fresh chives to top it all off.
I had everything in house except the smoked salmon. Three choices: 1) Be happy with prepackaged supermarket smoked salmon, drive to the store and get that; 2) Drive downtown Indy, 13 miles each way to get some really good fresh smoked salmon; or 3) Sub in the prosciutto that I had already on hand. I subbed the prosciutto.
So, I present to you: New York Breakfast in Little Italy, my version of this week's recipe. And how did it work out? I made it, I took photos for the blog, I turned my back to put down the camera, Matt walked in, thought it was for him, he ate it, and said, "This is great, do you have any more of these?" Apparently so as I wasn't going to get to eat that one. I'm going to miss him when he goes off to college, no doubt about it.
