The twelfth Bread Baker's Apprentice challenge (from the book by the same name authored by Peter Reinhart) is English Muffins (or English Muffin Bread Loaf), and is found on pages 157-158.
I decided to make both. The recipe makes six English Muffins, or one loaf, and I figured as long as I was in it, I might as well do both as 6 English Muffins or 1 loaf would not last long here at all with the guys.
I am never buying English Muffins at the store again as these were so wonderful, no comparison. The recipe is easy, who knew you could make English Muffins at home this easily? They even split with a fork nicely.
I toasted one up right away for Mark and I, so we shared this one with the strawberry jam on it. A big hit. Neither of us could get over how tasty these are freshly made like this.

This is sometimes difficult to find in the stores and bakeries, so I am thrilled to be able to make this one at home now. And I will. Buy the book, have at it, you will love these homemade English Muffins and loaves.
