The eleventh Bread Baker's Apprentice challenge (from the book by the same name authored by Peter Reinhart) is Cranberry-Walnut Celebration Bread, and is found on pages 154-156. My version of this recipe is just Cranberry Celebration Bread as it would be no celebration around here if I put nuts IN it, so this one is sans the walnuts.
The recipe was easy, ingredients were reminiscent of Thanksgiving with the Cranberry Orange Relish that accompanies dinner, and it was very nice as we all enjoy that. In the book the bread is suggested as a braid or a loaf and I chose a loaf as I knew we would all want to toast it and eat it as grilled cheese somehow, so I figured a loaf would be a better shape.
We enjoyed just eating a slice of it, it was very nice toasted, and it makes a great grilled cheese sandwich with roasted turkey and a slice of cheddar inside. I will be making this one again, a great find.
