We make chicken salad quite a bit around here as it is one of Matt's favorites...he eats two at a sitting. We also like Waldorf Salad quite a bit around here and it is one of Mark's favorites. I was eager to try this week's recipe because it combined the two recipes, and also for it's "slimmed down" version, using Greek yogurt in place of much of the mayonnaise.
The recipe goes together quickly, with all the usual suspects: chicken, mayo, lemon juice, S&P, some new additions like Greek yogurt, apples, grapes, walnuts, thyme, and then it all gets snuggled inside a romaine lettuce leaf and enveloped in a whole wheat wrap. It can be made ahead and ready for assembly into the wraps with very little time and effort on a busy week night.
Best of all: it tastes great! Definitely a keeper, definitely a repeat, sooner rather than later. I'm pretty sure it's my new chicken salad go-to recipe.
