Black beans have never been one of my favorites, so I was a bit skeptical about doing this recipe. Cabbage and tomatoes baked on the top of a black bean dip on top of a whole wheat tortilla...hmmm...wasn't sure about the sound of any of it. I figured I would make it for lunch and then report to the guys as it didn't sound like anything they would like either.
Oh, was I wrong! This black bean dip is very very good. It's black beans, onions, garlic, hot pepper, cumin, salt & pepper, cilantro, and a little water, all whirled about in the food processor and then spread over the 6" tortilla, topped with shredded cabbage, topped with tomatoes, and baked in the oven for ten minutes. That's it. 130 calories total. Huge amount of "pizza" for 130 calories.
It's a keeper...and a quick, tasty, and easy lunch for me when I am home alone. Am I going to let the guys in on this? Eventually.
