My father-in-law brought us some fresh raspberries from his garden just as I was preparing to make this dessert, so we had nice fresh raspberries in the dessert as well as for the sauce and topping. Can't beat that!
The recipe goes together quickly and easily, ingredients being simply milk, cream, almonds, sugar, gelatin, vanilla, and raspberries.
There was no baking involved at all this week: assembly only, place in refrigerator for a few hours or overnight, unmold, and you have a lovely and refreshing summertime dessert.
Even the sauce was extremely simple, just raspberries and sugar pulsed in the food processor, strained, and poured over the unmolded blanc-manger. We added a few raspberries on the top, and even Mark, who is not a raspberry fan enjoyed this dessert very much.
I only made half a portion in a small 6 inch mold as we have been having way too many desserts around here lately, and when that was finished, everyone was urging me to make more soon. I would say that was a hit.
The only thing I would do differently next time is to use almonds without the skin on them as the little brown flakes you see are that...tasted fine, didn't even notice it until I saw the photo, but I think it would be prettier without them. The next time I make it, I am going to try strawberries instead of raspberries just to see how that combination would taste.
Perfect party food...all of it can be done ahead and brought out at the last minute. Definitely will make this one again.
