I think this was the easiest recipe we have made at TWD. The recipe came together for me exactly as printed and baked for the amount of time specified. The apricot preserves and ground ginger were just delicious with the buttery flavor of the cookie. I didn't add or subtract anything until the end when Alex and I decorated them a bit for the Christmas cookie platter. They look a little bland all lined up, fresh out of the oven, but looks are deceiving because they are actually tasty little fruity bites, not too sweet, just perfect for complimenting a cup of tea. The recipe made 40 (it says 45, but I don't have the patience for waiting an extra round for a tray of 5 cookies, when 20 fit on each of the other two trays, so I just distributed the dough between its friends on the two sheets). Mark and I preferred them without the frosting, while Alex, as you can see, preferred loading up plenty on the frosting. I just added the frosting for the holidays...Dorie's instructions did not include icing. They were all gone in short order as the guys were popping them right and left...one bite wonders!
