Tonight's slow cooker dinner...it was a hit (even with the people who like non-touching food).
Slow Cooker Stuffed Peppers
6 Bell Peppers
3/4 pound of cooked ground sirloin
3/4 cup cooked rice
1/2 medium onion, diced finely
1 cup marinara sauce or chili
Salt and Pepper to taste
Wash and core the peppers.
Submerge peppers in boiling water for 2 minutes and then drain.
Mix ground sirloin, cooked rice, diced onion, and tomato based sauce.
Stuff peppers with mixture, top with a little extra sauce, and a few banana pepper rings.
In the bottom of the slow cooker drizzle a mixture of 1/4 cup tomato based sauce and 1/4 cup of water so that it just covers the bottom of the cooker.
Place peppers into cooker.
Cook on low for two hours.
(I made it all up in the morning when I had more time and kept it in the frig until time to cook it at 4:00 p.m.)
