The 90th recipe I made with the Eating with Ellie group is African Peanut Stew, and can be found in Ellie Krieger's book You Have It Made, on page 271. The theme for the week was chosen by me: March to Your Own Drummer.
This week is all about making whatever appeals to you from any of Ellie's recipes. I needed a good meatless dish for Lent and this one caught my eye because the photo of it was so pretty with all the vibrant colors in the stew. I also had an eggplant that needed to be turned into something delicious and fortunately found a red pepper and a sweet potatoes to keep it company. I love stews like this where you can see all the ingredients and eat them one at a time if you wish to do so, which most of the time is how I like to do things like this. The spices in this made it a little sweet, a little warm in flavor, with a little bit of a kick, nothing too much, just all in the right proportions to have a lovely new batch of flavors different from anything else I was cooking this week. The nutty taste of the almond butter and cashews was delicious...and so unlike any stews I usually make. This is a keeper, a recipe that I will enjoy making again and again.
