My forty-first recipe with Wednesday with Donna Hay is Soy-simmered Chicken, found in Modern Classics I on page 100, and also online here.
The ingredient list: sesame oil, soy sauce, brown sugar, shredded ginger, Chinese cooking wine, star anise, cinnamon stick, and chicken.
My, this was quick and tasty. The sauce is great, it really gives the chicken that Chinese taste that I so often try to create at home and can't seem to get it just right...the search is over, this is the sauce I was looking for...spicy, sweet, salty, and caramel-like in taste and texture. It compliments the chicken nicely.
The recipe suggested serving it with greens and rice and I have to say, a better suggestion I cannot imagine. This is a quick and fresh meal easy enough for a weeknight. I used the leftovers the next day in a lettuce wrap and that was also delicious, a lovely lunch. Definitely a keeper, one that I will make again.
