The forty-second Bread Baker's Apprentice challenge (from the book by the same name authored by Peter Reinhart) is White Bread (Variation 3), and is found on page 269. I made the full recipe of this bread, using it to make 12 sandwich burger-type rolls.
The ingredients: bread flour, yeast, whole milk, salt, sugar, egg yolk, and butter. This is a one-day dough.
Margaret and I are continuing on in our attempts to finish the book, only three recipes left. The dough is wonderful to work with and the bread has a nice texture that holds up well to ingredients like barbecued pulled pork for sandwiches while watching ballgames, for instance. In other words, it does not fall apart when moistened by the sauce...very important.
The flavor is just what you want, a little yeasty bread taste with a nice firm texture. Definitely a repeat.
