I didn't make this cake this week, opting instead to make a rewind cake that I knew would be a huge success and that was assigned before I joined the group, Bill's Big Carrot Cake on page 253-255. It was made in April of 2008, so here's a link to the recipe from then, click here.
Mark loves carrot cake, one of the few cakes he does love, and this was a really great recipe for carrot cake, cream cheese frosting and all! The inside is just full of carrots and raisins and coconut and nuts, everything good!
Definitely a repeat and this one is now my go-to carrot cake recipe from now on.
