A little of this...a little of that...nothing too special...but as the years pass, all of it seems so. CEiMB: Beef Taco Salad with Chunky Tomato Dressing

What a great Ellie recipe, Peggy, thanks, we all loved it. Not only did this taste great, it was easy and quick on a busy week night.
The meat mixture is just lean ground beef, black beans, garlic, chili powder, cayenne pepper, and water. The spices flavored the beef and beans nicely, not too spicy, spicy enough. The dressing for the tomatoes is olive oil, lime juice, salt, and pepper. The topping is grated cheddar cheese and crumbled baked tortilla chips. All of this goes on top of a bed of romaine lettuce. Easy simple, all the food groups nicely represented, definitely a repeat for us.
