The second week theme for I Heart Cooking Clubs, featuring chef Giada De Laurentiis, was Served Family Style, so I chose Giada's Chicken Florentine recipe from Giada's Family Dinners cookbook, page 89. You can also find the recipe here.
Loved this recipe, it was easy, quick, delicious, and a wonderful week night dinner. I served it with steamed broccoli and baked sweet potato fries, because the guys here are all about a weekly serving of baked sweet potato fries.
Ingredient list for the recipe is not long: boneless, skinless chicken breast halves, salt, pepper, flour, shallots, garlic, dry white wine, heavy cream, parsley, and spinach (it called for frozen, but I used fresh sauteed just a little as that is how we like it). It went together in a flash. Definitely a repeat.
The next week's theme was Potluck, come join in, just leave your link at the I Heart Cooking Clubs site.
