The recipe chosen this week for CEiMB, using Ellie Krieger's book, The Food You Crave, was my selection and is Whole Wheat Pasta Salad with Walnuts and Feta Cheese. It can be found on page 137 and also here.
We like a good pasta salad here, so when it came around to my choice again, I was looking at all the pasta selections that had not been chosen so far. This one sounded great and after making it, I can say, this is one great pasta salad recipe, worth repeating time and again.
The ingredient list is not long: pasta, walnuts, feta, red onion, spinach, walnut or olive oil, red wine vinegar, garlic, Dijon mustard, salt, and pepper.
I had some at room temperature just after I assembled it, delicious. I had some cold from the frig, delicious. I had some the following day just to see how well it held up, delicious. It holds up very well, something you could make the day before and have on hand for a gathering with no problem at all. Definitely a repeat.
